In a pot, add crabs then place dough. Combine flour, baking powder and salt, mixed with water. Make a firm dough. knead well and allow to rest 10 minutes. In a large pot, add a cup of water seasoned with salt, add pepper, and bring to a boil. Flatten dough and place over the crab. Cover the pot, boil on medium heat for 20 – 25 minutes without opening the pot.

????LOBSTER QUESADILLA: Boil dice carrots, onion, and celery. Add lobster and let boil for 10-15 minutes. Once boiled, remove lobster from the pot and place in an ice bath. Remove the lobster meat from the tail, then dice the meat. Separately, mix together grated pepper jack cheese, white cheddar cheese & 3 stems of scallions. Lightly brush olive oil on the outer part of the 10-inch tortilla. Sprinkle ancho chili powder. Add cheese. Add chopped lobster meat and sprinkle a touch of cheese then close. Place on a flat top grill and let cook until golden brown on both sides.Squeeze chipotle Cremer on top and drizzle salsa in the middle. Sprinkle green onions on top.

????LOBSTER STUFFED BANANA LEAF: Grill the banana leaf on the grill to make it pliable. Place the banana leaf down first, then add the three ounces of the cook grits as the base. Add two ounces of lobster filling on top of the cooked grits. Oil all 4 sides of the banana leaf to help it stick together and fold. Once that is done oil the grill and place the stuff banana leaf on the grill and cook for 6-8 mins. Once complete open the stuff banana leaf and garnish with the mango salsa, micro greens and olive oil.

​​????LOBSTER TAIL: Blend ingredients (Cilantro, parsley, spring onions, garlic cloves, ginger, lime juice, lemon juice, olive oil, jerk sauce, fresh orange juice, sea salt and pepper) together. Rub evenly on Lobster, place on an open grill to mark. Remove from the char grill and place in an oven at 350 degrees for 20 minutes. Serve with salad, sweet potatoes & salad
????JUNKANOO AVOCADO SALAD: Peel and dice mango, pineapple and avocados. Slice purple red orions and heirloom tomatoes. Place all ingredients (including fresh orange juice, lemon juice, small red onion (sliced) & lime juice) in a mixing bowl and toss, season with salt and pepper.
????PLANTAIN: Toss plantains with olive oil and roast until golden brown. Take out of the oven and sprinkle on cinnamon and honey.

In this episode the Assarain IV crew explores a grocery store in Matthew Town, Great Inagua and then begins their Bahamas crew.
En route from Inagua (Great Inagua) to the Crooked Islands group (Castle Island), Assarain IV stopped at an isolated unpopulated reef called Hogsty Reef. The water here was crystal clear, and was a great place to see sharks and other marine life.
At Castle Island we capture a small lion fish and discuss the harms that are attributed to them.

The Bahamas dream time

The Bahamas or The Bahama Islands, is an archipelago consisting of about 2,000 islands if you include the cays, which are small islands that are formed on coral reefs. Nassau is the capital of the Bahamas. It lies on the island of New Providence, with neighboring Paradise Island accessible via Nassau Harbor bridges. A popular cruise-ship stop, the city has a hilly landscape and is known for beaches as well as its offshore coral reefs, popular for diving and snorkeling. It retains many of its typical pastel-colored British colonial buildings, like the pink-hued Government House.

Arawak natives inhabited the islands when Christopher Columbus first set foot in the New World on San Salvador Island in 1492. British settlement of the islands began in 1647; the islands became a colony in 1783. Since attaining independence from the UK in 1973, the Bahamas have prospered through tourism and international banking and investment management.

The biggest event in the Bahamian calendar is 'Junkanoo', a street parade held on Boxing Day (26 December) and New Year's Day (1 January). The official language spoken in the Bahamas is English, however the dialect and slang is difficult for most Westerners and Europeans to understand, especially on the out islands.

Cable Beach is lined with resort hotels and upscale boutiques. Downtown, Bay Street is the main shopping hub. Its Straw Market sells handcrafted items such as conch-shell jewelry. The city’s dining options range from sophisticated restaurants to surfside conch shacks. Queen’s Staircase, whose 66 steps were cut from limestone by slaves in 1793, leads up to Fort Fincastle, built the same year, with sweeping harbor views. Paradise Island is home to large resorts with amenities like water parks and casinos. On the north shore is 3km-long Cabbage Beach, known for its broad, white-sand shore and turquoise waters.

Long Island, Bahamas: Sailing and Exploring. 4 Months in the Bahamas on our Leopard 45 sailing catamaran. Part 20: Long Island, Bahamas. Join us as we sail to Long Island, Bahamas on our Leopard 45 sailing catamaran, LabMariner, with our three labmaraners: Anubis, Mocha, and Nuala. A labmaraner is a cross between a labrador retriever and a weimaraner - and we have one of each color. We rent a car on Long Island to see some of the main sights: Lochabar Beach, Clarence Town, Bonnecort Beach, Dean's Blue Hole, the Columbus Monument, and Erna's Nature Pool. And, for Weekly Tip 10, Jim recounts one of his more painful memories in the Bahamas - when his fishing line got caught one of our sail drives.
