Pour rappel, le dossier de candidature de « La Harissa: Savoirs, savoir-faire et pratiques culinaires et sociales » est officiellement déposé, depuis octobre 2020, auprès de l’Organisation des Nations unies pour l’éducation, la science et la culture (Unesco). Le principal objectif de l’opération est d’inscrire la Harissa tunisienne sur la liste représentative du patrimoine culturel immatériel.
La Tunisie produit environ 20 000 tonnes de harissa / an dont environ 6 000 tonnes destinées à l’export. La production est en croissance d’environ +6% / an. Alors que les exportations sont en progression de +12 à +15% /an. Il semble que la harissa ne cessera pas d’interpeller les amateurs de plaisirs culinaires exotiques.

The Ruins of Ancient Carthage, Tunisia | Sights & Attractions of Carthage Tunisia
Carthage was an ancient city founded by the Phoenicians in 814 BC. It is located on the coast of North Africa, now Tunisia. It was a significant trading hub and one of the wealthiest cities in the classical world.
The city was protected by a wall that stretched over 40 kilometres, was 10 meters thick, and up to 13 meters high. The wall was built to defend the city against enemy attacks. 20,000 infantry, 4,000 cavalry, and 300 elephants were responsible for defending Carthage.
During the Magonid (Hannibal) dynasty, Carthage became the leading commercial power in the western Mediterranean. The city's success led to conflicts with the Greeks and then the Romans. Rome responded with force when Carthage invaded Sicily, resulting in a series of wars known as the Punic Wars.
In 146 BC, Rome destroyed Carthage during the Third Punic War. Julius Caesar rebuilt the city from 49 to 44 BC. Under Byzantine rule, Carthage remained the dominant city in North Africa until the Arab invasion in 698 CE, utterly destroying the city.
Today, the ancient ruins of Carthage are located on the edge of Tunis and remain an essential tourist attraction and archaeological site.

A LA DÉCOUVERTE DE SIDI BOU SAÏD - TUNISIE
A la découverte de Sidi Bou Saïd - Tunisie

Sidi Bou Saïd est un tout petit village de Tunisie situé à une vingtaine de kilomètres au nord-est de Tunis. Ce village porte d'ailleurs le nom d'un saint.
Les maisons sont construites selon l'architecture arabe et andalouse. On le constate par leur blancheur éclatante et leurs portes et balcons peints en bleu.
En visitant ce petit village aux ruelles tortueuses, on comprend pourquoi il est surnommé le petit paradis blanc et bleu.
Il faut dire que, dès le 17e siècle, ce petit village a d'abord attiré la bourgeoisie de Tunis qui y fit construire de luxueuses demeures. Et puis, au 20e siècle, ce sont plutôt les artistes, tels que Simone de Beauvoir, Lamartine et plusieurs autres, qui sont tombés sous le charme de Sidi Bou Saïd.
Ce lieu, fort paisible, surplombe la mer. En contrebas, on aperçoit le port ainsi qu'une toute petite plage.
