On this week's vlog, we take a roadtrip to Angeles City, Pampanga, the culinary capital of the Philippines. We explore the best of traditional Kapampangan cuisine, from farm-to-table dishes with a twist at Chef Sau del Rosario (of Cafe Fleur)'s 25 Seeds to heritage dishes from the Spanish era at Kusina Matua, and even some of the best fried chicken we've ever eaten right at Boom Chicken. Of course, no trip is complete without stopping by the home of the original Pampanga sisig at Aling Lucing's.
We also do some cafe hopping at two of the coolest cafes in the city, Kalidad Coffee and Siglo Poblacion.

🇵🇭SISIG: Wash and then chop the pork ears, cheeks, and head into big pieces. Boil for 1.5 hours in salt water. Chop meats into square pieces and then grill for 10-15 minutes. Add chopped onions, peppers, vinegar, salt, and chicken livers. Place on a hot pan with margarine.

🇵🇭FRIED CHICKEN HEADS: Coat the chicken heads in flour then deep-fry. Chop the heads in half then serve with vinegar sauce (onions, chilli and vinegar) and sweet sauce.

🇵🇭BETUTE (STUFFED FRIED FROGS): Mix ground pork with local herb (Alagao), chopped onions, and chopped carrots then season with rock salt and pepper. Stuff mixture inside the skinned frogs. Marinate the frogs in a mixture of vinegar, salt, pepper, and garlic for 15 minutes and then deep fry.
🇵🇭CAMERU (STIR-FRIED CRICKETS): Place the chopped onions into cooking oil, then add chopped garlic, tomatoes, then crickets. Stir-fry. Season with salt, sugar, and fish sauce.

🇵🇭RABBIT LECHON: Skin and clean the rabbits. Marinate in soy sauce, black peppers, salt, and spices for 3 hours. Skewer rabbits. Stuff the rabbits with lemongrass, and green onions for a normal flavor, and add red chilies and star anises for a spicy flavor. Sew the bellies and brush the outside with soy sauce mixed with coconut milk. Place on the fire and grill, while brushing more sauce on.

Mexico is a 1st class municipality in the province of Pampanga, the Philippines. According to the 2020 census, it has a population of 173,403 people. It was also formerly known as Nuevo México during the Spanish period.
The municipality of Mexico shares similar physical and cultural features with the City of San Fernando. Its proximity to the said city places Mexico in an advantage location as catch area for San Fernando’s economic spillover. This is evident on the growing numbers of commercial establishments in the western part of the municipality.

Masantol is a 2nd class municipality in the province of Pampanga, Philippines. According to the 2020 census, it has a population of 57,990 people.
Masantol is almost surrounded by the municipality of Macabebe (For it was once a former part of the town). It is known to be the southernmost town in the province of Pampanga. It is bounded to the north by the municipality of Macabebe; to the east by the municipalities of Calumpit and Hagonoy in Bulacan; to the west by Macabebe; and to the south by some parts of Macabebe and Manila Bay.

The town is named after the area's many santol trees, which used to grow abundantly. The town got its name from the fruit tree, either because santol trees were proliferating in the area, or because santol fruits were heavily traded in the city. It is known to be the southernmost town in the province of Pampanga. It is bounded to the north by the municipality of Macabebe; to the east by the municipalities of Calumpit and Hagonoy in Bulacan; to the west by Macabebe; and to the south by some parts of Macabebe and Manila Bay.

Bahagi ito ng Phase 2 ng North South Commuter Railway Project, na kilala rin bilang Malolos-Clark Railway Project. May habang limamput tatlong kilometro ang rail segment na ito at may anim na istasyon: ang Calumpit, Apalit, San Fernando, Angeles, Clark At Clark International Airport Station.
Tampok dito ang KAUNA-UNAHANG AIRPORT RAILWAY EXPRESS service ng Pilipinas: magiging limamput limang minuto na lang ang biyahe mula Clark International Airport patungong Buendia sa Makati, mula sa kasalukuyang 2 hanggang 3 oras.
Samahan niyo akong tuklasin ang mahigit 8-kilometrong kahabaan ng proyektong ito na babagtasin ang matubig na tanawin sa bayan ng Apalit, Minalin, at Santo Tomas sa lalawigan ng Pampanga. Makikita natin kung paano ang “swampy areas” na ito ang magbabago ng lubos sa transportasyon ng Pilipinas!

Minalin is a 4th class municipality in the province of Pampanga, Philippines. According to the 2020 census, it has a population of 48,380 people.
The town is known for its 400-year-old church, the Santa Monica Parish Church, with its unique design that incorporates pre-colonial architectural motif alongside its European Catholic iconography.[5] Minalin is also known for its Aguman Sanduk New Year's Celebration, where in which the town's straight men dress up as beauty queens and ride through town on festive floats.[6] The town is also referred to as the Egg Basket of Central Luzon because of its large-scale production of eggs and chickens, prompting the town to put up the Philippines' first egg festival in 2008.
