David’s Been Here continues its tour of ancient sites in Serbia at Justiniana Prima, or “Empress’ Town” in the town of Leskovac. Considered a great day trip option from the city of Nis, Leskovac is just a two-hour drive south.
David gets together with the only English-speaking guide he could find (Nebojsa “Nebo”) to see the Byzantine ruins of Justiniana Prima located about 29 km west of Leskovac nestled among lush scenery. Justiniana Prima was an early Christian city founded by Emperor Justinian I. It served as the seat of the Archbishop from 535 to 615. The site contains what is left of an enormous basilica, the acropolis, lower town, and upper town. Walking around Justiniana Prima will reveal city walls, gates, churches, and large bath complex with hypocaust system (heated floors). Justiniana Prima served as the administrative and spiritual center of Illyricum, a Roman province that encompassed the central Balkan Peninsula.
David shows us portions of unearthed mosaics and the remains of the public bath complex, which was heated by an innovative method known as the hypocaust system in which the heat from an oven was used to heat the floors from underneath, sort of like ancient sub-floor heating. Justiniana Prima is a beautiful site that badly needs to be maintained. While the Serbian government sorts that out, you will need a guide to show you around the different areas so you know what you’re looking at. PLJESKAVICA, a Serbian national dish also known as the Serbian hamburger, is a flat, round patty made from minced beef, pork, and veal, or a combination of the three, with the addition of selected seasonings such as paprika, salt and pepper, and in some cases, finely minced onions and garlic.
Flavorful and juicy, the word pljeskavica comes from the word pljeskati, meaning to clap, since this is the motion made when forming the patties that are then grilled on both sides to a smoky brown color, with typical grill marks on both sides.
Traditionally, the meat is then placed inside a thick flatbread called LEPINJA, which is as equally important as the meat - it should not be too dry, cold, nor crumbly, but moist, springy, and warm. The perfect pljeskavica should be juicy, perfectly spiced, and preferably topped with kajmak–a rich, clotted, slightly salty, local cream cheese.
Along with kajmak, the perfect accompaniments to the meat include finely chopped fresh onions, bell peppers, or pickled vegetables known as turšija.
There are also two significant varieties of pljeskavica: one is called gourmand's pljeskavica and has hot pepper flakes, tiny cheese cubes, and pieces of bacon dispersed throughout the meat, and the other one is called stuffed pljeskavica with sliced cheese, bacon, and sometimes ham inside the meat.

Exploring Leskovac | The Best Of Southern Serbia 🇷🇸
Our first impressions of beautiful Serbia were here in the far southeast in a small city called Leskovac. Famous for its legendary BBQ food (which is unbelievably good btw) the city has a lot more to offer than just food, we stayed for over a week and just enjoyed the slow paced local life, hit the markets and pretty much just relaxed.
Leskovac definitely warrants more than just a day visit for sure. So far we bloody love Serbia and the amazing friendly people we have met.

PLJESKAVICA, a Serbian national dish also known as the Serbian hamburger, is a flat, round patty made from minced beef, pork, and veal, or a combination of the three, with the addition of selected seasonings such as paprika, salt and pepper, and in some cases, finely minced onions and garlic.
Flavorful and juicy, the word pljeskavica comes from the word pljeskati, meaning to clap, since this is the motion made when forming the patties that are then grilled on both sides to a smoky brown color, with typical grill marks on both sides.
Traditionally, the meat is then placed inside a thick flatbread called LEPINJA, which is as equally important as the meat - it should not be too dry, cold, nor crumbly, but moist, springy, and warm. The perfect pljeskavica should be juicy, perfectly spiced, and preferably topped with kajmak–a rich, clotted, slightly salty, local cream cheese.
Along with kajmak, the perfect accompaniments to the meat include finely chopped fresh onions, bell peppers, or pickled vegetables known as turšija.
There are also two significant varieties of pljeskavica: one is called gourmand's pljeskavica and has hot pepper flakes, tiny cheese cubes, and pieces of bacon dispersed throughout the meat, and the other one is called stuffed pljeskavica with sliced cheese, bacon, and sometimes ham inside the meat.
