En effet, le reportage a braqué la lumière sur lui, notamment à travers le restaurant d’une parisienne d’origine tunisienne où les amateurs de la harissa affluent. Le reportage a suivi tout le processus de préparation.
Pour rappel, le dossier de candidature de « La Harissa: Savoirs, savoir-faire et pratiques culinaires et sociales » est officiellement déposé, depuis octobre 2020, auprès de l’Organisation des Nations unies pour l’éducation, la science et la culture (Unesco). Le principal objectif de l’opération est d’inscrire la Harissa tunisienne sur la liste représentative du patrimoine culturel immatériel.
La Tunisie produit environ 20 000 tonnes de harissa / an dont environ 6 000 tonnes destinées à l’export. La production est en croissance d’environ +6% / an. Alors que les exportations sont en progression de +12 à +15% /an. Il semble que la harissa ne cessera pas d’interpeller les amateurs de plaisirs culinaires exotiques.

Djebel Boukornine (Tunisia) Vacation Travel Video Guide
Travel video about destination Djebel Boukornine in Tunisia.
Seemingly endless dense forests extend across the hills of the Djebel Boukornine National Park. They are the green lungs of the Tunisian metropolis of Tunis that is located a few kilometres away. From the forest covered hills of the nature reserve the view stretches to the outlying areas of the pulsating capital and to the Mediterranean.The region's mostly humid and warm Mediterranean climate promotes the prolific growth of vegetation as well as numerous wild flowers. The dense undergrowth of the forests that covers the hills offers protection to a large number of indigenous animals such as wild boar and mufflon. The area close to the summit of Djebel Boukornine is one of much historical significance. At a height of around five hundred and seventy-six metres are the remains of an old Saturn temple that was dedicated to the Two Horn God who protected the former city of Carthage. The Tunisian Dorsal Pass and the bordering north eastern ridge of the mighty Atlas Mountains can be seen from the hills of the national park.Tunisia contains a diverse variety of scenery in a relatively small area and both socially and culturally it is still strongly influenced by age old customs and traditions.

This time, in Ben Arous, I pick up a member of the Tunisian Scouts and explore their campground, followed by a drive through Hamam Lif and a mountain bike ride down the mountain Bougarnine.

Balade autour (hiking around) Djebel Ressas - Ben arous - جولة حول جبل الرصاص
Sur toute la largeur de la Tunisie la Dorsale érige ses reliefs d’une altitude moyenne de 1000 m. Dans l’axe du Cap Bon le Djebel Ressas avec une altitude de 795 mètres en est la première sentinelle.
Situé au gouvernorat de Ben Arous à Morneg, le Djebel Ressas ou la Montagne de Plomb, dôme de calcaire jurassiques aux flancs abrupts, tire son nom des veines de plomb qu’on y exploitait déjà du temps des romains. Ces mines restèrent longtemps en activité. Mais elles durent être abandonnées en raison de la faible teneur du minerai. Une route mène à la fonderie et la laverie qui se trouvent au pied de la montagne.
Le Djebel est couvert par une forêt de thuya de berbérie associé à des formations à oléolentisques.
Un barrage (Bakbeka) qui se trouve à la face sud ajoute une beauté à la beauté du Djebel.
La nature fait les hommes semblables, la vie les rend différents !

Day Trips from Tunis: Hiking & Urbex - abandoned Roman mineshafts on Djebel Ressas, Tunisia
We went to try and climb Djebel Ressas, a 795m peak in Tunisia's Ben Arous Governorate. Instead, we got lost in an abandoned mineshaft! After a fun bit of urbex it all worked out OK in the end, and we enjoyed some amazing views from high up on the mountain. Such a sunny day in the north of Tunisia!

E: Ever since I had seen the mountain on the other side of the Gulf of Tunis from Sidi Bou Said, I had a yearning to go up there. In the middle of Boukornine National Park, it's the highest peak around. What was not clear to me, was that it is forbidden to enter the Park with a vehicle let alone go to the top of the mountain. The gate was open, no signs (in English of French)... so off I rode.
D: Seit dem ich das erste mal den Berg auf der anderen Seite des Golf von Tunis sah, hatte ich ein starkes Bedürfnis mal da hoch zu fahren. Mitten im Boukornine National Park, ist es der höchste Berg im Umkreis. Was mir nicht klar war, dass es Verboten ist mit einem Fahrzeug im Park hinein zu fahren, geschweige den bis zu Gipfel zu gehen. Das Tor war auf, keine Schilder (in English oder Französisch)… also rein bin ich gefahren.
