ここはスペイン北部、バスク州ビスカヤ県の県都ビルバオです。世界遺産にも登録された世界最古の運搬橋「ビスカヤ橋」や、建物自体が圧巻のグッゲンハイム美術館などが有名です。ビルバオには大きな空港があり、世界一の美食の町サンセバスチャン(100㎞)への玄関口ともなっております。
ビルバオはサンセバスチャンほどではないのですが美食の町で、ピンチョス店が多数あります。
今日はその中でもビルバオに来たら絶対行くべきピンチョス店2店を紹介します。
『ピンチョス』とは、スペイン語で「爪楊枝」や「串」という意味で様々な食材を串に刺してつまめる料理のことです。串に刺さなくてもピンチョスと言ったりします。ピンチョスは、ここ「バスク地方」発祥の食べ物なのです。
●「La Viña del Ensanche(ラ ビーニャ デル エンサンチェ)」
ちなみにサンセバスチャンにバスクチーズケーキで有名なバル、La Viñaという同じ名前の店がありますが、この店とは関係ありません。
1927年創業。店内はバーカウンターと、テーブル席が多数あり、かなり広いです。いつ来ても活気があり、雰囲気は最高です。
美食の町「サンセバスチャン」のピンチョス店と比較しても、バスク地方でNo1のピンチョス店だと私は思っております。
2015年に観光で、そして2016年は出張でビルバオに来て、2回ともこの店に来ました。
特徴は創作料理がどれも最高で値段もお手頃な所です。
ホセリートの生ハムはもちろんのこと、肉料理、魚料理、デザート、全てが最高においしいのです。
日本語も表示されるiPadメニューもあるのでとても分かりやすいのですが、私のお勧めは、指差しオーダーです。
カウンターに行って、準備している料理で美味しそうなのがあったら、これ！と指差しオーダーするのが確実です。
ちなみに、スペイン語でCamarero(カマレロ)と呼ばれるウエイターさんたちは記憶力が抜群！いろいろとオーダーしてもちゃんと内容を覚えていて、最後の会計でお支払いします。
私が食べておいしかった料理は、
①イベリコハムの中でもスペイン最高峰と言われるJoselito（ホセリート）の生ハム
塩気が抜群で甘さもあり、とろけるような生ハムで最高です！
ホセリートを使ったリゾット、コロッケ、その他料理がありますのでそちらもぜひ！
次におすすめはほとんどの方がオーダーするこちら！
②卵黄、フォアグラ、きのことマッシュポテトのミニスキレット
Minisartén de foié, huevo, hongos y puré de patatas 4ユーロ（480円）
フォアグラと卵黄、きのこ、ポテトの組み合わせが最高！いくつでも食べられるうまさです！
③タラの鉄板焼き、ローストピーマン添え
肉厚のタラは柔らかくて最高！当時3歳の息子はバクバク食べてました。
④こちらは和食を意識した料理、見た目はカツオですが、マグロのづけにゴマを振りかけ、下にはライスがあります。
黄緑色のものはワサビを意識したソースです。これがまたうまい！
⑤イベリコ豚ほほ肉の赤ワイン煮
とろけるほど柔らかくて最高でした！
⑥デザートは、フルーツが入ったクリームの表面をオーブンで焼いたもの。
見た目にも美味しそうなのが分かると思います。
他にも料理はいろいろありますが、この店の創作料理は見た目も味も最高！
1品4€からと値段も安いんです。ビールやチャコリなどを飲みながら美味しい料理を堪能してください！
●Gure Toki
2軒目はこちら、Gure Tokiです。
ヌエバ広場にあるバルの中でもお客さんが外まであふれて、ひと際目立つ人気店、1982年創業、比較的新しい店です。
ウナギの寝床のような長細い店内が特徴的で、バーカウンターはこのようにかなり狭いです。
でも、狭い店内で隣の客とひしめき合って食べるというのは日本人的にはありかなと思います。なんか、よりおいしい感じがします。
この店は、ピンチョスの大会で優勝したこともあり、実際に賞を取った「うずらの卵とキノコのチーズスープ」が有名です。
バスク地方の羊のチーズを使ったスープは絶品です。
私はタコが大好きなので、このタコにかつお節がのった料理はおいしかったです。
他にはフォアグラや肉料理などもいいですね。バーカウンターに並べてある前菜で、美味しそうなのがあったら取って食べるのもいいと思いますよ！
ちなみに、それほどでもない料理もありました。なのでやっぱりおすすめは1件目のLa Vinaですね。

The Modernisme Plaza of the City Hall of Valencia was the transformation of the square of the City Hall of Valencia by Javier Goerlich in 1931, now in its site is the current Plaza of the City Hall and its fountain.
The Dr. Daniel Benito Goerlich (nephew of architect Goerlich Lleó), Professor of Art History and Curator of Cultural Heritage of the University of Valencia, assures that the reform of the 1930s belongs to a very specific social context, and was destroyed a few years later in a completely different context, the repressive postwar, towards the disaffected to the political regime of the time. Benito Goerlich, is, curiously, nephew of architect Goerlich Lleó.
The work of the Plaza del Ayuntamiento ended the previous Bajada de San Francisco, so it was expropriations that caused expected unrest among the owners and neighbors. The subsequent Plaza and Parque de Emilio Castelar is part of the height of the architectural work of Goerlich Lleó starring purist, Art Deco and Modernisme styles. Which was destined to become the new civic center of the city, competing with the plazas de la Reina and de la Virgen, it was then carried out by a high and triangular platform. The corners, culminated with fountains, representing the three provinces of the region.
