Article explaining the different grades of jamón:

I’ve eaten a lot of jamón in Spain, but I’ve never actually bought a whole one. Why? They’re expensive. It’s complicated (do you go jamón Serrano, jamón ibérico, jamón ibérico de bellota?). Plus you have to know how to care for it. And you have to be able to get through it within about a month. That’s a lot of pressure.

But finally, this Christmas, when my family was coming to visit from New Zealand, Yoly and I decided to take the plunge and buy an entire ham. And this is our story.

We went to the fantastic Madrid ham shop, Mercado Jamón Ibérico, where the owner Luismi gave us three different grades to taste (with cava!) to help us make our decision. Once we chose the ham, he opened it for us using various knives and gave us tips on how to care for it and also gave me a crash course in carving it.

Then we took it home… the pressure! We stored it in the kitchen, but decided to leave a window open to keep the temperature cool.

A few tips that we learned:

1. The front leg - a paletilla - is a great cost-effective way to get a jamón. They’re cheaper because they contain less meat. But that also means that if there are only a few of you, you have a decent chance of getting through it before it dries out.

2. If possible, buy it from a where they will open it for you so you can get it home and simply start eating.

3. As you work your way through it, cover the exposed meat with slices of fat from the ham. This keeps the meat moist.

4. If you can’t get through the whole ham and you’re worried it’s going to dry out, simply take it back to where you bought it and ask them to cut it into slices and vacuum seal the slices. Then you can keep them in the fridge for a few months. Just remember that when you go to eat them, you need to leave them out to bring them up to room temperature for eating.

Have you heard of Spanish ham - jamón serrano and jamón ibérico (otherwise known as serrano ham and iberico ham)? Have you tasted it? If you have, you'll know that in the world of Spanish food, ham is king! Cured ham from Spain is perhaps the most delicious cured meat in the world. It can be rich and complex like a fine wine. But there are so many grades, and so much confusion about what the different between them are. What's jamón ibérico? What's jamón serrano? What's pata negra! (And remember - it's not called jambon - that's French!). Join me as I discover Spain's famous ham in a traditional market in Madrid. Watch, learn and drool!

WeBarcelona.com / The best Iberian ham tasting with Manuel López / Private Tours Barcelona

The Japanese have the Kobe beef, and the Spanish have the cured ham. This delicious Spanish gastronomy comes from a unique pig breed in the whole world, only found at the Southeast of the Iberian Peninsula. These are animals reared unrestrained in Holm Oak forests and feed exclusively with acorns. The pieces are cured by means of artisanal processes in cellars following the tradition. Its taste can stand alongside the best in the world such as that of the caviar and foie. Manuel López's life goes around its taste. He is an afinador de jamones (a cured ham expert in finding the optimal pieces), and he will show you in Barcelona a tasting of the best Iberian hams, with a surprise combination, for your palate to get delighted with a unique product.

More information at:

Reo...Llegando a Guijuelo-13º... ¡Qué jamón!

Domingo,13 de Mayo ... 11:10 ... LLegando a Guijuelo-Salamanca.

Transcript:
We're in Madrid in Spain. It's lunch time and we're always hungry. Today we are going to experience the street food of Madrid and all that the city has to offer.

Right near the centre of Madrid, near the Plaza Mayor, there is a food market call Mercado de San Miguel were we are now. It's an indoor food market that has an amazing selection of food to offer.

If you come to Madrid, then one of the things that you have to try is the Jamon. It's a delicious Spanish cured ham. There are lots of varieties, so there is lots to choose from. The best way to have jamon is in these little paper cones. The jamon is really nice, it's not too salty and it's got a creamy texture. It's really delicious.

One of the best things about coming to a market is that you can try some new things. We're going to go for the sea urchin. I've never had sea urchin before. This is kind of like a stuffed sea urchin. It smells kind of fishy. It has a really strong fishy flavour, kind of like mashed potatoes from the sea. It's not my favourite thing ever.

The San Miguel Market is really vibey. It's really busy and there are a lot of tourists, but it's got a fantastic atmosphere and vibe. It's a great place to eat street food.

One of the main things that you must try is called pinchos (pintxo) which is basically a baguette type bread with various ingredients on it. Fresh ingredients on bread, you can't really go wrong. The hardest part with pinchos is keeping the ingredients on the bread.

One baguette with fried squid rings please. We've already had a lot to eat, but we've seen these all over Madrid. It's fried calamari in a bread roll. Sounds like heaven, looks like heaven and tastes like heaven. Not good for your health, but very tasty.

You can't come to Madrid without having some sangria. It's fruity, it's cold, it's alcoholic magic. It's super refreshing. I'm more of an ice cream fan to cool down. There's a lot of places selling ice cream in Madrid. I've gone for chocolate. It's always my go to flavour.

Down a narrow street in the middle of Madrid (Pasadizo San Ginés), there's one of the oldest chocolaterias in Madrid. They do the most amazing thick hot chocolate with churros in Madrid. Churros is this kind of fried dough that they put in sausage / finger shapes which are perfect for dipping. The hot chocolate here is thick, warm and delicious and not too rich.

There are a number of terraces dotted throughout Madrid. I suggest to not go to Plaza Mayor as it's very expensive and a bit of a tourist trap. We've on one of the smaller squares (Santa Ana) and we're trying tapas. which are little, small dishes in various types. This is the croquette and we're also having calamares or fried squid.

That's it for our food tour of Madrid.

Travel Spain: Salamanca -- a UNESCO World Heritage Site

On May 31, 2010 my stay in Asturias had come to an end. I said goodbye to my gracious hosts at the Posada de Babel and started my drive eastwards along the coastline of Asturias. Slowly the rainy and cloudy weather gave way to bright sunshine near Oviedo, and on my way through the mountains, I stopped the car to admire the breathtaking mountain scenery.

Then I left the mountains behind and drove into the plains of Castile and Leon. The famous Camino de Santiago (St. James Way), the ancient pilgrimage route, snakes its way through here. In the mid-afternoon I arrived in Salamanca, my destination for the day. I checked into my hotel, the 4-star Hotel Regio on the outskirts of town. After a brief rest I drove 10 minutes and parked my car just next to the Tormes River.

With a population of about 160,000 people, Salamanca is an important city in the autonomous community of Castile and Leon. It is about 200 kilometres west of Madrid and most well-known for its historic university, which was founded in 1218. Today Salamanca is one of the most popular destinations for Spanish language studies. Thousands of foreign students study here.

I walked through the downtown area and enjoyed the golden sandstone buildings, most of which stem from the Renaissance area. This has earned Salamanca the nickname The Golden City (La Ciudad Dorada). The impressive Plaza Mayor is the city's central square and can hold about 20,000 people. In former times it was even used as a venue for bullfights.

Salamanca's cathedral is of Romanesque style and was founded in the 12th century. The adjoining new cathedral dates from the early 1500s and was finally finished in 1734 and encompasses Late Gothic and Plateresque styles. On my walk through town I also caught a view of the imposing university buildings. The University of Salamanca was host to many famous students and lecturers, including Christopher Columbus, Hernan Cortes, Miguel de Unamuno, and Miguel de Cervantes.

Other sites in Salamanca include the House of Shells (La Casa de las Conchas), built in the late 15th century and studded with 350 sandstone shells, and the Roman Bridge, which dates back to 89 AD which was part of the Roman sliver route.

Sevilla City Tour

Seville City Guide - What to visit in Seville?
Welcome to the online travel guide of Seville! The city of Seville (or Sevilla in spanish) is the capital of the Spanish region and province of Andalusia and has about 700,000 inhabitants, making Seville the fourth largest city in Spain. In the cultural, political, economic and artistic realms, Seville is the most important southern Spanish city. Seville has the largest historic centre of Europe. The historic city centre of Seville offers many attractions, such as the Real Alcázar de Sevilla, the Seville Cathedral with the Giralda Tower and the Torre del Oro at the river.

This beautiful city is located on the Guadalquivir river. Thanks to the many historical highlights, Seville is seen by many people as the most beautiful city of Andalusia and Spain. Conclusion, considering all the Arabic influences, the narrow winding streets, parks and the large historic centre (Barrio de Santa Cruz). Barrio de Triana, a district of Seville is seen as the birthplace of flamenco, the typical Spanish dance and music. Seville is famous for its Mudéjar architecture, which is a mix of Islamic and Catholic architectural styles. After the Catholics defeated the Moors, who had ruled over Seville for more than 500 years, they kept many beautiful buildings intact like the Alcazar Palace. Sometimes they gave it their own Catholic twist, like the cathedral with the Giralda.
