Uzbekistan Day 3: Tashkent to Samarkand - Food Road Trip Uzbekistan!

On Day 3 we packed up in Tashkent, and made our way driving to Samarkand, one of the most historically significant cities in all of Uzbekistan, and Central Asia. But this is not the Samarkand food and history tour yet, this is the the journey to get there, which involved some incredible food stops along the way.

Chinoz Fish Market - One of my favorite Uzbek meals of the trip was at the fish bazaar on the way to Samarkand. There are a series of restaurants to choose from, located just a stone's throw from one of the biggest rivers in the country. You choose your fish, it was carp, then she hacked it into small pieces, and deep fried it to a crisp. But the real unique aspect of this style of Uzbek fried fish was that she took garlic in water, and tossed it all over the fried fish right out of the oil. Something I’ve never seen before, and it was quite fascinating to see. Fish was great.

Melons Stop - Melons are native to Central Asia and they are naturally some of the sweetest and some of the best tasting in the world. They were for sure the sweetest best tasting melons I’ve ever had in my life.

Afsona Jizzax Somsa - Next stop on this Uzbekistan food road trip was to eat a giant somsa (samosa). Now you have probably already seen that you can’t really go a day in Uzbekistan without eating a somsa, and that’s a good thing because they are delicious. But these are super sized, filled with ½ kg. Of mutton and onions, and cooked in the tandoori oven. To eat these speciality somsa you add in some type of oil and tomato sauce.

Samarkand, Uzbekistan - Finally in the evening we arrived to Samarkand, and just along the highway we caught a glimpse of the mighty building and history of the city.

Samarkand Restaurant - Food here was alright. We ordered a sharing kebab tray.
Total price - 227,000 ($28)

????????Considered Uzbekistan’s national dish, it is impossible to visit Uzbekistan without eating plov (probably more than once). For over 20 years, Central Asian Plov Center has been satisfying taste buds, serving 2,000 people on a daily basis. They’re known for their giant Khazan, where one batch of plov contains 65kg of meat, 100kg of rice and about 30kg of carrots.

????PLOV: Beef and lamb, onion, sunflower oil, yellow carrots, chickpeas, black pepper and other spices, lamb fat, raisins, garlic and chili (optional).

2. UZBEKISTAN ASSOCIATION OF CHEFS: Grilled Catfish in Clay + Blooming Fried Carp

The majority of chefs in hotels and restaurants in Tashkent graduated from Uzbekistan Association of Chefs. 20-year-old Ahmadjon Hamdamov is one of Uzbekistan’s top chefs. At the age of 14 he took home his first medal as the champion of the Global Cooking Contest in Greece.

????????GRILLED CATFISH IN CLAY: First the chef marinates the catfish with black pepper, white pepper, salt, chicken egg yolk, mixture of salt and egg white. Then he mixes the clay (from the Uzbek mountains) with water, coating the fish in a thick layer of the mixture before wrapping it with aluminum foil and letting it cook for 35 minutes.

????Abdurahman Foziljouov opened Qanotchi in 2017 and quickly became famous for his ability to combine cooking and entertainment. Known as the Uzbek “Salt Bae,” he has garnered national attention and even received a visit from the original Salt Bae.

Prepare the gravy (includes sunflower oil, lamb marinated with soy sauce and eggs, onion, green pepper, red pepper, cabbage, garlic, salt, soy sauce, tomato, bok choy, tomato sauce, water, MSG and ginger powder). Finally, pour the sauce on top of the noodle dish and enjoy!

Turkmenistan remains an extremely repressive country. The government severely restricts all fundamental rights and freedoms, including freedoms of association, expression, and religion. President Gurbanguly Berdymukhamedov, his relatives and their associates control all aspects of public life, and the authorities encroach on private life. The government carries out forced evictions without adequately compensating those affected. The government continues to conceal the fate and whereabouts of dozens of people forcibly disappeared following their imprisonment during waves of arrests in the late 1990s and early 2000s, although it has begun to return to families the bodies of several inmates forcibly disappeared years ago who have recently died in custody. Activists and independent correspondents critical of the government face increased intimidation, harassment, physical attacks and imprisonment. The country remains closed to any independent scrutiny.

Surinamese CHINESE & INDONESIAN Breakfast Markets Tour | Paramaribo, Suriname

My second day in Suriname was another epic adventure! I started my day with a breakfast tour of the local markets in the capital of Paramaribo, where I tried some super yummy Chinese and Indonesian foods! Join me as I explore more of Paramaribo!

My buddy and guide Imro from Jenny Tours took me to Independence Park. On Sunday mornings at 6:30, people bring their birds to show them off!

I was super hungry and couldn’t wait to eat! We arrived at the Chinese market, where there were yellow tents selling Chinese street foods. I saw my favorites, pork buns! They also had lots of dumplings. It took me right back to my time in China!

I got a pork bun, a chicken bun, chicken shumai, beef balls, and pork shumai. I started with the pork bun, which I can eat every day in China. It was super juicy and had a nice, flavorful sauce. The pork was really nice and tender and the bun itself was really flaky. It tasted almost the same as the ones in China!

The chicken shumai with soy sauce took me back to Shanghai! The beef ball was gamy and dense. Meanwhile, the pork shumai was tasty and airy. It was my favorite! The only thing that took away from the authenticity was the fact that I was eating it with a fork!

The chicken bun was so good and was filled with chicken and a rich, red-orange sauce. It had more meat than the pork and was the better of the two!

Then we saw some fresh and fried tofu, buns with cream inside, chicken, pork, buns, and even Chinese pizza!

Further along are vendors selling vegetables, including some I had never seen before. There was a type of eggplant that I wasn’t familiar with, some frozen seafood, and roasted duck! There were also sausages, which I couldn’t wait to taste!

The sausage looked like chorizo and was coated in a delicious, Chinese sauce. The wrapper was tough, but the pork inside was tasty and super fatty! I also got 5 fried fish balls on a stick. It wasn’t my favorite, but it was decent. It needed hot sauce!

This Chinese market opens every Sunday at 7 a.m. There are so many things to try! Then I got some sugarcane juice, which was so sweet and refreshing!

From there, Imro took me to the Javanese market, Saoenah Markt. It’s the biggest Indonesian market in Suriname. People from Indonesia immigrated here in the late 19th century.

I found a vendor making Indian vada almost immediately. There were lots of vendors selling greens. I could se stomach and tons of other dishes like fried banana, satay, and small plates.

I got some liver satay in a rich sauce, fried banana with peanut sauce, and a lumpia with spicy ketchup. The liver was so dense and the sauce had a peanut-like flavor. It blew my mind and was the best liver ever! The deep-fried banana was like a plantain and reminded me of a maduro. It was sweet and spicy! The lumpia was stuffed with tasty vegetables. There was some nice egg in it. Everything came to 15 SRD, or just under $2 USD.

Next, I got a coconut and rose milk juice with small jellies on the bottom. It was sweet and refreshing. I was loving the diversity in Surinamese cuisine! Then I met a subscriber named Monica. There were clothing and produce vendors there.

The heat was killing me, though! I suggest getting an ice slushy. Next, we headed to a third market that sells clothing, produce, and wine made from cassava. It contained 2% and was nice and light. It had a rosy taste and was a little bitter and earthy. I loved it!

There were also vendors selling birds like picolets and parakeets. There were also fruits soaking in vinegar, clothing, CDs, and more.

» THE TRADITIONAL FOOD IN MADAGASCAR

1. TSENA’NY TANTSAHA TALATAMATY: Rice Porridge + Chinese Noodle Soup
ADDRESS: Talatamaty City
OPEN: 3AM - 7AM (or whenever the police shut it down)

Four miles outside of Madagascar’s capital city, Antananarivo, lies Talatamaty City. Talatamaty City is home to one of the country’s largest local morning markets, Tsena’ny Tantsaha. Sellers open up shop at 3am, selling everything from produce to fabrics. And lucky for us, the market has no shortage of food to try as well.

????RICE PORRIDGE: Zebu (Malagasy cattle) and sausage are mixed with leaves, ginger, special Malagasy rice, porridge and spices.

????CHINESE NOODLE DISH: Pasta, macaroni, potato, mayonnaise and zebu skin.

2. TALATA VOLON’ONDRY: Sausage + Koba
ADDRESS: Talata Volon’ondry
OPEN: Varies

Talata Volon’ondry is a village located just outside of Antananarivo. The village is known for producing sausage and Madagascar’s national snack, koba.

????SAUSAGE: There are typically two types of sausage being sold - zebu sausage and a halal style potato sausage. This snack is frequently accompanied by local rum.

????????KOBA: Lay out banana leaf spines with banana leaves on top. Add a layer of rice flour to prevent the koba mixture from sticking to the banana leaves. Then add the koba mixture, a combination of crushed raw peanuts and sugar. Wrap it all up in the banana leaves and allow it to cook in a bit of water for 3 days.

Koba is beloved across Madagascar, primarily sold on the street or to people in their cars as they drive through a city. The fuel from the ingredients gives people energy and helps them stay full even when walking long distances without and source of food along the way.

The ULTIMATE Uzbekistan STREET FOOD - Tandoori SOMSA (SAMOSA) + LAGMAN | Tashkent, Uzbekistan

After arriving in Tashkent, Uzbekistan, I hit the ground running to explore as much of the city as I could. Come along with me as I try the ultimate Uzbekistan street food, tandoori somsas, and check out some of the local attractions!

Bobur:

My first Uzbek adventure began at Minor Somsa Restaurant with my guide, Bobur (or Bob), who would be showing me around. Minor Somsa is one of the best places in town to eat somsas. They’re similar to an empanada or an Indian samosa.

The restaurant was packed. It was open-air and had lots of seating on the outdoor terrace. I was the only foreigner there!

There were four tandoor ovens, where they stick the uncooked beef somsas around the inside wall of the oven. Once they’re inside, they fire them up and toss water inside. After they’ve cooked, they use a tool to scrape the somsas off the inside. The ovens are about 300 degrees inside. It’s super hot standing next to them!

I was losing my voice because of the dry air, but I couldn’t wait to eat. I had to let the somsas cool down because they were boiling hot. Bob served us some green tea after we took our seats.

The somsa was unbelievable! The minced meat inside was tender, juicy, and delicious. I tasted lots of incredible spices and the dough was nice and flaky. There were also onions inside! I added some tomato sauce, which made it even better!

Then I tried the traditional green tea, which was very light. It’s healthier than other types of tea and was really delicious.

Then I dove into the second somsa. It’s different from Indian samosas, which usually contain peas, lentils, or potatoes. I couldn’t get enough of the dough. It was the perfect, tasty snack. It cost only $0.30 USD for one somsa! Eating good food like this is a true experience.

Then, we arrived at the Minor Mosque of Tashkent, the main mosque in city. It’s relatively new at 4-5 years old. It had some beautiful blue, hand-painted tiles on it. The mosque has two minarets, a fountain, and two stunning, hand-crafted doors. The designs on them are gorgeous!

From there, we headed out to eat more traditional Uzbek food! On the way, I marveled at the Soviet-style buildings and wide streets. There were also lots of trees. The Silk Road went through Tashkent, so Chinese and Indian people came through here. Those influences can be tasted in the noodles at Lagman House!

Inside, I watched them prepare the noodles. At our table, we had some amazing fruit juice, which was like a mix of peach and apple!

Then, we had some of the national bread, which was soft and fresh like the crust of a pizza! I loved how fluffy and airy it was. It tasted great with the chili oil!

My ultimate Uzbekistan street food tour continued with the lagman. It was topped with fresh beef, vegetables, and sauce. It was al dente and the noodles were thicker than glass noodles. It was dense, mild, and light on spices, but still so good! It reminded me of Italian pasa! Fresh ingredients, made with love. You can’t beat it!

Then, we drove to the Old Town to the Khazrati Imam Mosque. Old Tashkent felt very different from the modern area. The streets were narrower and it felt more like the countryside, with smaller houses. The mosque dates back to the 16th century and is massive! There are two minarets, and the mosque houses one of the oldest Korans in the world! It’s from the 7th century and is a national treasure.

We walked through the complex to a small, family-run shop in a handcraft bazaar where they were making jewelry boxes, seats, plates, and more. I bought some jewelry boxes for my wife and daughters for 650,000 som/roughly $68 USD, but he gave me a discount!

Hola viajeros!

En el nuevo video de @3Sixty xElMundo visitamos Tayikistán. Un destino para intrépidos viajeros donde, entre otros lugares, se encuentra la gran cordillera de Pamir, su carretera nos conduce al techo del mundo, pero esa historia os la cuento otro día.

Éste pequeño país centro asiático, poco conocido, tiene su capital en Dusambé, aunque no es muy grande podemos visitar diferentes lugares y uno de ellos es su Mercado Central.

Hace unos años el Bazar de Dusambé, llamado Bazar Mehrgon fue demolido y actualmente está el nuevo mercado de Mehrgon. Hoy veremos qué nos ofrece éste singular lugar y lo que podemos degustar.
