CEBU, PHILIPPINES - Welcome to Cebu, the capital where you’ll find the best Filipino roast pig, better known as lechon. Today we’re going on an ultimate pig tour to eat the best lechon in the Philippines - maybe the entire world! It’s going to be a day of crispy skin, juicy pork, and the action is going to be insane!

Here are all the places we went in this Philippines street food tour:

Gogoes Lechon ( - First up is Gogoes lechon located north of Cebu. We arrived at 5 am to see the process of them roasting their lechon. They fill up the belly of the pig with sea salt and a combination of spices that includes ginger and especially green onions. The pigs roast for 3 - 4 hours, carefully being turned as they roast so the skin cooks and crispfies perfectly. It was sensational and a perfect way to start this ultimate Filipino lechon tour. (Price - they wouldn’t charge us)

Ruthy's Lechon ( - Next up we headed to Talisay, known as the birthplace of lechon, and where the original lechoneros come from. Stanly first took me to Ruthy’s one of the standards of lechon - packed and they fly through the pigs. We chopped up a 3 kilo belly section of the pig. The skin was insanely crispy, salty, and full of juicy green onions. Price - 2,940 pesos

Lolo Soy's Lechon House - Finally, one of the greatest lechon’s in all of the Philippines, Lolo Soy's Lechon House. They fly through pigs and they had already sold over 20 pigs by the time we arrived. The action is out of control! We ordered a kilo and they also gave us some of the feet, plus some of the blood stew. Price - 750 per kg, we had 1 kg

Paraz Native Lechon ( - For our last stop on this ultimate Filipino lechon tour we drove down to Carcar, another famous lechon city. We went to Paraz Native Lechon where they sell over 50 pigs a day, and they use native natural pigs. The pigs are still roasted over coals using traditional bamboo skewers. They chop it up, it’s so insanely juicy and then they drizzle on the drippings with all the onions. Additionally, they are known for their chili vinegar, which is some of the best you’ll have anywhere.

This was one of the greatest days of eating pig in my lechon, Cebu lechon really is the king of roast pig!

PLJESKAVICA, a Serbian national dish also known as the Serbian hamburger, is a flat, round patty made from minced beef, pork, and veal, or a combination of the three, with the addition of selected seasonings such as paprika, salt and pepper, and in some cases, finely minced onions and garlic.
Flavorful and juicy, the word pljeskavica comes from the word pljeskati, meaning to clap, since this is the motion made when forming the patties that are then grilled on both sides to a smoky brown color, with typical grill marks on both sides.
Traditionally, the meat is then placed inside a thick flatbread called LEPINJA, which is as equally important as the meat - it should not be too dry, cold, nor crumbly, but moist, springy, and warm. The perfect pljeskavica should be juicy, perfectly spiced, and preferably topped with kajmak–a rich, clotted, slightly salty, local cream cheese.
Along with kajmak, the perfect accompaniments to the meat include finely chopped fresh onions, bell peppers, or pickled vegetables known as turšija.
There are also two significant varieties of pljeskavica: one is called gourmand's pljeskavica and has hot pepper flakes, tiny cheese cubes, and pieces of bacon dispersed throughout the meat, and the other one is called stuffed pljeskavica with sliced cheese, bacon, and sometimes ham inside the meat.

Spain, land of Deserts and Spaghetti Westerns

Christmas Trip through France & Spain Pt4.
Seeing the sun come up over the desert near Benahadux was just simply amazing.
After a quick Breakfast I went over to a Rambla near Fort Bravo that I had explored many years ago on Enduros. Even so you can't see it, the rambla has a steady incline which together with the lose sand makes riding there a good workout.
After the bike ride I drove on in direction Seville/Portugal.
The DPF issue however put a big damper on the trip and after the warning re appearing only a few miles after the static regeneration, forced me to cut the trip short by a few days and make my way back home. That unfortunately meant more driving per day and less mind-blowing landscapes.
I drove to Herrera, which I marked as park up on route to Portugal earlier, the park4night park up is right at the outskirt of the town and has rubbish, water and waste facilities. The toilets however were closed when I arrived. I assume these will change over summer.
From here I drove the next morning changing direction from South West to North East and my first stop of the day was at the Calatrava la Vieja. Another example of a castle taken from the Muslims and handed to the Knights Templar. Unfortunately, the castle grounds were closed This didn't stop me flying the drone. While archiving the footage later that evening I unfortunately saw that the footage was corrupted :-(
I made my way all the way past Toledo and Madrid to Alcolea del Pinar, try to say that three times fast. The park up here is next to the municipal pool, and you guest it, closed during winter. Non the less a very nice and quiet night.
Next morning then a frost start up north east. Stopping at Almazan, pretty little place and certainly on the list of places to come back to in Summer.
And on I drove to the Bardenas Reales de Navarra (not Banderas Antonio de Hollywood).
These were on my list of places to go for a long time and I have to admit, I was a little disappointed.
Certainly worth a visit, especially if you plan it so you can cycle around them for a day. Not hurry through it in a couple hours.
My park up for the night then was in Salvatierra de Esca in the foothills of the Pyrenees.
A brand new park up with should have rubbish and water facilities in summer. The place is level and quiet. Great for a night or even a couple of nights. The mountains around just call out for you to explore.

They make amazing nature oriented food videos cooking outdoors. And today Tavakkul is cooking a whole lamb two ways - part is on a hot stone over fire and with the ribs he’s cooking them in a tandir. Qamarvan is a beautiful location, set in a valley surrounded by some of the highest mountains in Azerbaijan. It’s green, lush, and home to some of the best lambs that graze naturally and organic food. Wilderness Cooking is an outdoor cooking show that specializes in natural foods, organic cooking and oftentimes whole animals. What I love about this is how therapeutic their cooking is. Nothing is rushed and the sounds are kept natural.

Today, Tavakkul is cooking a whole lamb as fresh as possible. He has a number of amazing cooking techniques around the yard and today he’s cooking half the lamb on a fire hot stone and the other goes into the mud tandir oven. He seasoned the meat with salt and pepper. For the hot stone the trick was the amount of lamb fat he melted down to almost confit the lamb in its own dripping fat. For the tandir lamb, it was cooked then basted with sour plum sauce. Let me tell you, not only does Tavakkul’s cooking look good, but it’s insanely tasty. Everything is saturated with as much lamb fat as possible giving it the maximum amount of flavor.

It was an incredible day, the food was delicious, and the Azerbaijani hospitality was even better.

Tavakkul does have a restaurant in Qamarvan that’s call Qaya Restaurant that you can definitely check out when you’re in the area to get some amazing local Azerbaijani food.
