One of the experiences I really wanted to have when I visit the Quintana Roo state of Mexico, was to learn about, cook, and eat authentic ancient Mayan food. So we rented a van, and drove over to the small jungle Mayan village of Chunhuhub, to meet up with Kíichpam K'áax ( who are aiming to preserve their Mayan culture.
It was about a 3.5 hour drive to get to Chunhuhub from Playa Del Carmen, so by the time we arrived we were all pretty hungry. We walked through the milpa (Mesoamerican crop growing system), and finally to the kitchen within the jungle of the property.
They were already busy cooking, preparing a few traditional Mayan foods, like a variety of tamales and cochinita pibil. They prepared everything to be cooked in the pib, the ancient Mayan traditional way of cooking - an underground hot rock oven (there are many cultures around the world who have used or still use a similar underground cooking technique).
Tok-sel - One of the most fascinating dishes they cooked was white beans, and they took a hot rock out of the fire, stuck it into the pan with the beans, and roasted them with the rock. It was incredible to see, and the beans had an incredible ummai flavor to them. They were delicious especially when paired with freshly made corn tortillas.
Achiote (annatto) - An interesting ingredients, used commonly in Mayan food and cooking, is achiote, a pod filled with red / orange fruit. It has a slight pepper and lemony taste, and also makes everything that uses it, bright orange.
Cochinita pibil - One of the main ingredients in cochinita pibil is achiote. They had pre-marinated it, and it cooked underground as well. The flavor of the pork was amazing, and with tortillas, onions, and salsa, it was truly support.
We had a number of different tamales as well, all of which were totally different from any tamales I’ve ever had. They were hearty and packed full of corn and beans, and very filling. They were a little on the dry side, but I fully enjoyed learning about them, and watching them being made. The different leaves, including the hoja santa, was great to learn about.

Cueva Jane, A Tricky Bit. Quintana Roo Mexico
A new cave found with a tricky bit or two along the way. We found very old Mayan pottery shards (500 -1000 years old) beyond this restriction. How they got there is beyond me. I checked every corner of this cave and found no other entrances. Maybe a hurricane washed them in from closer to the entrance of the cave. Who knows!

Maya Journey - Coba - Chumuc-Mul - Ballcourt (C), part 10 (11.16.09.J)
Coba (Cobá in the Spanish language) is a large ruined city of the Pre-Columbian Maya civilization, located in the state of Quintana Roo, Mexico. It is located about 90 km east of the Maya site of Chichen Itza, about 40 km west of the Caribbean Sea, and 44 km northwest of the site of Tulum, with which it is connected by a modern road.
Coba is located around two lagoons. A series of elevated stone and plaster roads radiate from the central site to various smaller sites near and far. These are known by the Maya term sacbe (plural sacbeob). Some of these causeways go east to the Caribbean coast, and the longest runs over 100 kilometres (62 mi) westwards to the site of Yaxuna. The site contains several large temple pyramids, the tallest, in what is known as the Nohoch Mul group of structures, being some 42 metres (140 ft) in height (tallest in the Yucatan).
Coba is estimated to have had some 50,000 inhabitants (and possibly significantly more) at its peak of civilization, and the built up area extends over some 80 km². The site was occupied by a sizable agricultural population by the 1st century. The bulk of Coba's major construction seems to have been made in the middle and late Classic period, about 500 to 900, with most of the dated hieroglypic inscriptions from the 7th century. However Coba remained an important site in the Post-Classic era and new temples were built and old ones kept in repair until at least the 14th century, possibly as late as the arrival of the Spanish.
Knowledge of this expansive site was never completely lost, but it was not examined by scholars until the 1920s. John Lloyd Stephens mentioned hearing reports of the site in 1841, but it was so distant from any known modern road or village that he decided the difficulty in trying to get there was too daunting. For much of the rest of the 19th century the area could not be visited by outsiders due to the Caste War of Yucatán. Teoberto Maler paid Coba a short visit in 1893 and took at least one photograph, but unfortunately did not publish at the time and the site remained unknown to the archeological community.
Amateur explorer Dr. Thomas Gann was brought to the site by some local Maya hunters in February 1926. Gann published the first first-hand description of the ruins later the same year. Gann gave a short description to the archeologists of the Carnegie Institution project at Chichen Itza, which sent out an expedition under J. Eric S. Thompson. Thompson's initial report of a surprisingly large site with many inscriptions prompted Sylvanus Morley to mount a more thorough examination of the site.
Eric Thompson made a number of return visits to the site through 1932, in which year he published a detailed description.

Pocos minutos antes del amanecer frente a la caleta de Xcaret, el poderoso sonido del tunkul (instrumento de percusión maya), señala el inicio de la 10ª edición de la Travesía Sagrada Maya.
De aquí partirán 400 canoeros, hombres y mujeres quienes después de meses de preparación y alentados por su espíritu guerrero, remarán en canoas tradicionales hasta Cozumel para recibir el mensaje de la diosa Ixchel.
El 20 y 21 de mayo vive esta tradición ancestral que Experiencias Xcaret junto con el esfuerzo de los canoeros, ha hecho posible por 10 años consecutivos.

Un sitio maya que puedo expresarlo de una belleza asombrosa, lo curioso es que pegada a la comunidad Iturbide, gente muy amable, con muchisimos monticulos por restaurar, a la entrada una espectacular piramide totalmente cubierta, de significado bóveda pintada, Dzibilnocac fue un asentamiento grande, integrado por varios grupos de construcciones monumentales dispuestas regularmente sobre un amplio terreno. Muy atractivo en su decoracion de los edificios con Mascarones de Mosaico de Piedra, Los falsos accesos al templo están decorados por enormes mascarones estilizados del Monstruo de la Tierra, y en sus esquinas se aprecian Cascadas de Mascarones de Chaac, Dios Maya de la Lluvia, visto de perfil.
