Why This Portuguese Sardine Cannery Swears By Its 100-Year-Old Method | Regional Eats

Canned sardines are a delicacy in Portugal. The country has a long fish-canning tradition, to the point that the sardine has become a national icon. We visited Conservas Pinhais, one of the oldest preserving factories in Portugal, that has kept its artisanal canning method since 1920. It makes 30,000 cans a day.

It is made from the rear leg of the black Iberian pig, a rare breed that can be found in the southern and western regions of the Iberian Peninsula, which comprises Spain and Portugal.

How Traditional English Stilton Cheese Is Made At A 100-Year-Old Dairy | Regional Eats

Stilton cheese takes its name from the village of Stilton, in the east of England. The earliest reports of cheese made and sold here date to the 17th century. In 1724, English writer Daniel Defoe referred to the town being famous for cheese, calling the product the English Parmesan. Today, Stilton can only be made in six dairies, which are spread across three counties in England: Nottinghamshire, Leicestershire, and Derbyshire. We visited Colston Bassett Dairy in Nottinghamshire to learn more about the cheese is made.

How Sardines are made oldest factory in Portugal

Pinhais Cannery & Co. is a unique artisan factory of the Portuguese canning industry in the heart of Matosinhos. It is the only canning company in Portugal that continues to produce using the hand method. Every day women working on a factory are carefully cutting carrots, peppers and onions, and then put 3 selective sardines inside the box. Next, the can is handed over to the final processes of fulfillment and packing.

How to eat sardines is the video of the day! :) In Portugal we use to eat a lot of fish and usually the whole fish is served! Sardines is one of the most typical lunch we have! Fresh sardines from the Algarve or Figueira da Foz!
Put the sardines on top of the bread, squizz a bit to realease the natural fat of the Sardines and eat it with your hands. Repeat this process for the amount of sardines that you like to eat. At the end, comes the best part! To eat the bread! :)
We season the sardines only with salt. 2 hours in advance it's enough to absorv the salt!

São Jorge is a tiny island in the middle of the Atlantic Ocean. It is also home to one of the richest and most elaborate cheeses on Earth: São Jorge cheese. The volcanic geology of the island means that its soil is rich and fertile. Its location in the middle of the ocean guarantees a mild, damp climate all year round. The result is abundant vegetation that basically never dies and cows that are able to graze freely 365 days a year. These conditions pack São Jorge cheese with moisture, hints of spiciness, and a grassy scent.

Insider’s Claudia Romeo traveled to Edinburgh, Scotland to meet with James Macsween, a third-generation haggis producer who has turned his grandfather’s butcher shop into one of the most successful haggis companies in the UK. Haggis is spiced meat encased in animal intestines with salt, spices, and a few other ingredients depending on the recipe. Macsween’s haggis is made using lamb lungs, beef fat and a secret mixture of spices from a 67-year-old recipe.
