How Brie De Meaux Cheese Is Made In France | Regional Eats
Insider's Claudia Romeo traveled to Seine-et-Marne, France to visit Ferme des 30 Arpents. The farm is one of seven farms making raw-milk Brie de Meaux cheese, and the only one that makes it fermier, which means that the cheese is made by hand solely with milk produced by the 250 cows at the farm. Every day, Ferme des 30 Arpents will make about 300 wheels of Brie de Meaux from its herd's milk.

Today, France makes 360 million wheels of Camembert each year. We visited Le 5 Frères, a family-run farm in the village of Bermonville that makes Camembert following the traditional recipe using raw milk and ladles it into molds by hand.

Caciocavallo cheese is one of the most popular cheeses in Italy and is famous for its signature elongated shape. In the caciocavallo family, there is one kind that is so rare that at times it can be even more expensive than the finest of Parmesans: caciocavallo Podolico. This special type of caciocavallo is made with the raw milk of Podolica cattle, a rare breed of cattle confined to a few areas where water is scarce and survival is difficult. One of these is the Gargano, a peninsula whose close proximity to the sea gives Podolica cows’ milk a rich, earthy flavor. This milk,in combination with how the cheese is aged, lends a salty, sharp, almost spicy flavor to the finished product. Virginio Frumenzio, a full-time livestock breeder and part-time cheesemaker, shares the story of this incredible cheese with us.

Will Studd Selected Le Marquis Brie de Rambouillet Educational Cheese Video
In France, it is increasingly hard to find farmstead cheese made with milk from a single farm. Most examples are produced in very small quantities from raw milk, and these are rarely found outside the area of production.
This soft, surface mould ripened cheese, specially selected by Will, is a wonderful exception. It is hand made in a modern, purpose-built fermier that lies in the shade of the Rambouillet deer forest, south west of Paris. Le Marquis is made with fresh pasteurised milk sourced exclusively from a small herd of pampered Friesian cows.
The unique combination of moulds, cultures and a traditional poplar wood box helps to ensure that the chalky centre of the young cheese slowly breaks down to a soft gooey texture over 3-4 weeks of careful ripening. One can tell when Le Marquis Brie is at its optimum because it has a distinct fungal aroma and is soft when pressed. The cowy barnyard flavours of the mature cheese are a perfect reminder of why fermier cheese is so special.

Ricotta is a very versatile cheese that can be eaten in very different ways. And, technically speaking, it’s not even really a cheese, because it comes from the liquid whey when the milk is curdled. Bigger dairies that make cheese often consider liquid whey just a leftover product and use it to feed livestock or even discard it.
But for smaller, local dairies here in Italy, it is a great opportunity to optimize their resources and get something great out of them. We visited a dairy in the town of Locorotondo, Italy, where cheesemaker Giovanni Montanaro transformed liquid whey into ricotta.
