Venezuela is a a very diverse country with deeply rooted traditions.
Avoiding the the boisterous Caracas, we chose to go to Merida, at the foot of the Venezuelan Andes. There, at the Soto Rosa market, we meet Aura Marcucci who introduces us to fishmongers, exotic fruit sellers and traditional cheese producers.
Aura cooks for us the “Pabellon criollo”, a dished prepared all over the country. The second dish we enjoy is a desert, “El Quesillo”, a crème caramel with passion fruit and guava juice. Finally, we discover the “pizca andina”: an Andean soup from the region of Medina, eaten daily by farmers. So tell us, which dish is your favorite?
