Torre Lupara: terra felix, bufale e mozzarella dop

In a single visit you will be able to know:
- the breeding of the Italian Mediterranean buffalo
being able to bottle-feed the calves, enter the milking room and see the buffaloes swimming in the pool
-you will understand how milk becomes cheese
and then the stages of processing ... the milk, the curd, the stretched curd and finally the mozzarella that you can cut with your hands
- you will taste the buffalo mozzarella d.o.p. and other buffalo products such as ice cream made with buffalo milk
Torre Lupara is located just 3 minutes away from the A1 motorway exit of Capua and it also operates as Fattoria Didattica offering the opportunity for tourists to be guided on a tour that shows and illustrates one of the most important chains of our territory: agriculture, buffalo and mozzarella PDO (Protected Designation of Origin).

Torre Lupara is a small quarter of Pastorano village, where the Iemma family, originally from Salerno, moved their buffalo company in 1945. Since then, they created a reality, which is now present on the territory as a closed and controlled short chain: agricultural and zootechnical firms produce forage crops for buffalo and the industrial dairy transforms their milk into buffalo mozzarella.

The agriculture and animal husbandry of Iemma group pay particular attention to:
the quality and preservation of the forage produced in their farms,
animal welfare by providing buffaloes parklands and swimming pools,
the herd's health with veterinary and zootechnical daily tests.

The mechanized milking rooms and the data collected since 1950 are extremely useful for the research and for buffalo genealogy of the milk buffalo.

Casearia Lupara's dairy farm exclusively works fresh buffalo milk from the PDO area. The quality of their product is guaranteed by over 4000 annual checks carried out by national and international governmental agencies as well as in-house laboratory analyzes.

In un’unica visita potrai conoscere:
-l’allevamento della Bufala Mediterranea Italiana
potendo allattare con il biberon i vitellini, entrare in sala di mungitura e vedere le bufale fare il bagno in piscina
-potrai capire come il latte diventa formaggio
e quindi le fasi della lavorazione… il latte, la cagliata, la pasta filata e infine la mozzarella che si potrai mozzare con le tue mani
-degusterai la mozzarella di bufala d.o.p. e altri prodotti bufalini come il gelato fatto con latte di bufala

Torre Lupara è una piccola contrada del paesino di Pastorano, dove dal 1945, la famiglia Iemma, originaria del salernitano, trasferì la propria azienda bufalina e diede vita ad una realtà che oggi si traduce in una filiera corta chiusa e controllata che parte dalla terra (200 ettari), dove si coltiva il foraggio per le bufale allevate, e si chiude nel caseificio, dove il latte viene trasformato in mozzarella di bufala distribuita anche in paesi oltre oceano.
La nostra impresa però è un insieme di realtà:
le villette (con orto e scuola bus) date gratis alle famiglie dei nostri collaboratori,
le bufale che vivono in parchi in terra e piscine dove fare il bagno,
la terra coltivata, curata e concimata con gli scarti zootecnici che diventano riciclo e ricchezza,
l’opificio industriale dove si lavora in sinergia tra le tradizioni casearie e i nuovissimi macchinari, consentendo uno standard del prodotto esportabile in tutto il mondo,
… tutto ciò ci offre lo spunto per presentare la terra che ci ospita (Terra Felix), i mestieri che il nostro territorio può offrire, cosa significa lasciare nel mondo un’impronta ambientale leggera e soprattutto vorremmo far arrivare il messaggio che il lavoro, l’impegno e il sacrificio gratificano l’uomo che però non deve dimenticare di essere felice e far felice. La felicità dei nostri dipendenti, la felicità delle nostre bufale, si traducono in valore aggiunto che poi i clienti ritrovano nel prodotto.

Lunga tappa su percorso misto, sterrata e asfalto.
Partiti da Ponticelli attraverseremo Acquaviva e Montelibretti prima di raggiungere la riserva naturale della Gattaceca e infine, su asfalto, Monterotondo.
Il percorso si snoderà sui colli laziali e in mezzo agli uliveti, per portarci infine verso la pianura.

Starting from Ponticelli we will cross Acquaviva and Montelibretti before reaching the Gattaceca nature reserve and finally, on asphalt, Monterotondo.
The route will wind through the hills of Lazio and in the middle of olive groves, to finally take us to the plain.
